Spotlight on Liberty’s Kitchen Guest Chef Night with Chef Will Avelar

Kicking off its 2018 Guest Chef Night series this week, Liberty’s Kitchen welcomed Chef Will Avelar of Meril for an intimate evening of good food and celebration.

As honorary guest chef, Chef Will created a special three-course prix fixe dinner that brought together the organization’s partners, students, alumni, and supporters to recognize recent graduates of the Liberty’s Kitchen Youth Development Program.

A beneficiary of the Emeril Lagasse Foundation since 2010, the Liberty’s Kitchen Youth Development Program provides culinary workforce and life skills training to at-risk youth and empowers them with the tools, education and confidence to become employed and self-sufficient.

Current program participants joined Chef Will in the kitchen and the front-of-house team for a night dedicated to the inspiring work and life-changing results of Liberty’s Kitchen and its Youth Development Program.

Javette Hitchens, a graduate of the program and current line cook at Meril, is a testament to the successes of the initiative and was personally invited by Chef Will to assist with the event. As Chef Will’s main assistant in the kitchen, Javette helped prep, cook and plate the outstanding dinner for 50 guests.

The menu included the following courses that were served by current Liberty’s Kitchen program participants:

First Course

Fried Rock Shrimp Salad, Butter Lettuce, Cucumber, Pickled Red Onion, Sambal Dressing

Second Course

Korean Short Ribs, Cucumber Kimchee, Candied Pork Ribs, Miso Glazed Carrots, Lemongrass Steamed Jasmine Rice

Third Course

 Bananas Foster Doberge Cake, Candied Pecans, Caramel Sauce

I’m honored to have been asked to participate as a guest chef for Liberty’s Kitchen’s dinner series and show my support for this incredible program,” said Chef Will. “Mentorship is invaluable for young people in the hospitality industry, and myself, as well as the Foundation and Emeril’s restaurants, are proud to be a part of helping shape the next generation of this workforce in our community.

The Emeril Lagasse Foundation is a proud long-time supporter of the life-changing work taking place at Liberty’s Kitchen. Much of the training and education at Liberty’s Kitchen occurs at the Emeril Lagasse Foundation Teaching Kitchen, at the café that was funded by a grant from the Foundation.
